What is the Technique of Preparing Mandi Biryani?

The preparation of Mandi Biryani is quite unique compared to the Indian Biryani. In this dish, Hawaii is basically the main ingredient which includes rice, meat, and a concoction of spices. The meat can be of any animal like lamb, camel, goat or even chicken depending on one's preference. It is being cooked in the tanner which sets it apart from the others. 


Besides that, to continue with its preparation, heat is created using dry wood which is put in the tandoor and burned until it becomes charcoal. The basmati rice is cooked in the spiced liquid which is used to cook the meat until it is soft at the bottom of the tandoor. 


Then the meat is left suspended over the rice inside the tandoor and away from the charcoal. The entire tandoor is covered with clay and left closed for around seven to eight hours. It is garnished with cashew nuts and other dry fruits. Once done, it is then served hot as a main dish during lunch and dinner.
